Do you love the summer and/or salads as much as I do? This salad recipe is perfect to enjoy in the summer (or when you are dreaming of warmer weather like I am most of the time!) The key ingredients are lettuce, strawberries, candied pecans, & goat cheese. My husband & I love to eat protein in every meal, so this salad is great with bacon and/or rotisserie chicken. For the dressing, we use a flavored white balsamic vinegar.
I can't say this is one of the healthiest kitchensinkit recipes, since the candied pecans on top are a treat, so we usually enjoy this salad for a weekend lunch. INGREDIENTS FOR TWO SALADS
1 bag of lettuce (sweet hearts mix of sweet butter lettuce & romaine hearts recommended)
Strawberries (1-2 cups total)
Candied pecan pieces (~1 Tablespoon per salad)
Crumbled goat cheese (~1/4 cup per salad)
White balsamic vinegar (we used cranberry pear flavor for this salad & use about 1 Tablespoon per salad)
Bacon (we buy this bacon from Costco and the serving size is two pieces/person)
And/or 1 rotisserie chicken (not pictured, but recommend adding about 3/4 cups (5-6oz. of chicken to each salad for extra protein to make this salad more filling!)
Mix all of your ingredients together & enjoy! These bowl-like plates are perfect for salads and we use them all the time. They were one of the best items we put on our wedding registry!
