PURPLE CAULIFLOWER & POTATO PUREE INGREDIENTS
1 head of purple cauliflower
1 potato
1/4 cup water (reserved purple water from boiling the cauliflower)
1 Tablespoon butter
Desired amount of seasoning
PURPLE CAULIFLOWER & POTATO PUREE INSTRUCTIONS
Peel & chop potato
Chop cauliflower
Boil potato & cauliflower in a pot of water for 20 minutes (until soft)
Before straining your pot, use a measuring cup to carefully scoop out 1/4 cup of the purple water. This helps your purée keep the purple color & the starch from the potato in this water acts as a thickener for the purée.
Once you strain your pot, add the potato & cauliflower to your Vitamix blender with 1T butter & desired amount of seasoning
Blend it up, leave the hole open at the top of your blender so steam can escape but cover the hole with a paper towel so it doesn't splatter everywhere!
Serving size: 2 meals

As mentioned earlier, we like to pair this purée with seafood. To make halibut and/or red snapper, place it in your air-fryer and cook for 15 minutes at 400 degrees. We spray our air-fryer with avocado oil spray and lightly season the fish. You can always add more seasoning afterwards if needed!
To sauté corn, simply remove it from the cobb with a knife and place it in a pan with a little butter on medium high heat until the corn is done to your desired amount of brownness.
