Here's the kitchensinkit recipe for simple & healthy tomato lime chicken made in an Instant Pot! This is a great recipe to make during your weekend meal prep & very easy to add to lunch salads throughout the week for healthy, well-balanced meals! If you don't have an instant pot, you can make this chicken in a pan on your stovetop!
TOMATO LIME CHICKEN INGREDIENTS
~3lbs chicken breasts (this makes enough for 6 meals - so Richie & I will eat this lunch on Monday, Wednesday, & Friday, for example)
2 cans of tomato paste
1 T seasoning salt
1 T garlic seasoning
1 T paprika
juice from 3 limes
Chicken broth (needed for later)
Add all of your ingredients to a large food storage container & let the chicken marinade overnight if possible!
INSTANT POT COOKING INSTRUCTIONS:
Spray the bottom of your Instant Pot with cooking spray
Add the tomato lime marinated chicken & about 2 cups of chicken broth to the Instant Pot
Cook on the chicken setting (this takes 15 minutes once it's pressurized, but it does take some time (~20 minutes) for the Instant Pot to pressurize) but then it's done! It really is that easy!
MAKING THE TOMATO LIME CHICKEN INTO A HEALTHY, WELL-BALANCED MEAL
This chicken would be great with many different veggies, carbs, & healthy fats, but we usually eat the chicken with iceberg lettuce (veggie) & avocado (healthy fat) for a simple lunch salad! We are currently eating pretty low carb, but if you wanted to add a carb to this meal, you could add these ingredients to make a healthy wrap or eat the salad with a piece of toast!
