Asiago shrimp or lobster risotto with spinach is one of our favorite instant pot recipes! It is cheesy, creamy, & delicious. It feels like a lighter, healthier risotto by using shrimp or langostinos (wild-caught lobster tails) as the protein. It also has nutritional value by adding spinach for the vegetable, making this a well-balanced meal! Recipe inspiration came from this, but we had to turn it into a Rich & Kitch meal prep recipe. This instant pot makes enough for four meals for you & your significant other (so eat this for dinner on Monday & Wednesday night, as an example). An instant pot is a great kitchen appliance to have because it cooks your food more quickly, making meal prep a breeze!
INGREDIENTS
Cooking spray (we like avocado oil spray)
1 cup Arborio rice
4 cups low sodium chicken broth
Desired amount of seasonings: salt & pepper (or our favorite seasoning salt), onion powder, & garlic seasoning
~2lbs shrimp thawed, peeled, & deveined OR you can use 2lbs langostinos (wild-caught lobster tails) & we buy them in the freezer section at Costco. This makes the dish a bit fancier for date night & it is easier because all you need to do to the langostinos is defrost them!
5oz container of asiago cheese (or extra if you want to add some cheese on top at the end. Parmesan cheese would work, too!)
At least one, 8-10oz bag of spinach (I like to add more because it shrinks up)
1 lemon
INSTRUCTIONS
Spray bottom of the instant pot with cooking spray
Add Arborio rice, 3 cups of chicken broth (save 1 cup for later), & seasonings
Secure the lid & make sure the vent in the back of your instant pot is closed
Select the manual function & set the timer for 12 minutes
When the time is up, quick release the remaining pressure
Once the pressure is released, open the lid & select saute (The remaining steps are done in the instant pot without the lid on)
Add the shrimp or langostinos & remaining 1 cup of broth to the instant pot
Occasionally stir the shrimp or baby lobster tails until they are cooked, meaning they will be opaque in color (Shrimp do not take long to cook, and you don't want to overcook them, so this should take about 3-5 minutes. If you buy the langostinos I linked above, these are pre-cooked, so you just need to warm them up in the instant pot!)
Stir in spinach until wilted
Stir in Asiago cheese until melted
Add the risotto into bowls (these bowls are our favorite), squeeze desired amount of lemon juice (zest the lemon as well for an extra kick), and top with salt, pepper, & extra cheese (if desired)
